It counts as scanning a creature if you just kill it though, so there's no point in that.
With that said they are a bit janky and take some time to get setup right. But once you get the basics down they add another layer to this sandbox.
Apparently they didn't let her do any work on Starfield...

They do have other functions as well, but those aren't strictly necessary and don't confer some massive advantage necessarily, unless you intend to set up a huge crafting network basically, which is definitely a thing you can pursue. It's all just depending on how you want to play. Like many things, they're just options.
I'm gradually working towards building a modest homestead on a planet just to do it, as part of my "life as an independent merc" roleplaying lol.

They get major points for recycling effective designs, but this is ridiculous...
NMS? Absolutely no need to build bases planetside, yet many people find building bases to be the major draw of that game.
Star Citizen? Elite Dangerous? You can't even build bases in either of these games.
Base building has a purpose in Starfield as pointed out by @Eight-Six, but not everyone wants or needs too. That does not make it bad, just optional.
Good thing you don't have to build at all if its not your thing.
