They only way is to toss it in a recycler once you get it. This is something that is being worked on. Fertilizer is stuck as well. Once planted in a big pot all you can do is water. Some plants though require some fertilizer to get started. Hopefully we see fixed by 1.0.

No. Big pots are locked into a seed. Small pots you can change.
Fertilizer might be changeable after it is used up but there is no point in doing that if the seed only uses one kind of fertilizer.
I store the big pots and start a new one for each seed.
Devs know about this "bug" we will see if it gets fixed.

That functionality doesn't seem to exist. If you're limited on resources and can only build one large plot and need to get another plant growing the only way to accomplish that would be to pick up the plot, recycle it into it's component parts using the recycler, and then craft a new plot and put that down.

If you've got plenty of materials and space is the limiting factor you can simply keep a large plot with each kind of plant in a storage container. They'll keep forever planted in the plot and sitting in a storage container, so you can simply grab out the one you need resources from at a given point and it will pick right back up growing again once you add water to it.

The problem is that they are not labeled. Finding the right one is hunt and peck if they are in the same storage chest.
Or if you have a large ship, you can create a greenhouse and have eight growing at once. I never build that big though.

Most of my ships I end up making big enough I have at least 1 to 2 of every plant in game. Plus a freezer full of stuff. I'm a hoarder. LOL. Never know what you might need. :)
