You know what it is, I got excited about building out my airship and probably what I need to do is back off of that for a bit until I get these planters and such going, and maybe then it will be easier to deal with.

You can water plants with any kind of water, purified or dirty. The same applies to the electric cooker. You only need purified water to drink and a few recipes.
Not infinite, around 1000 units. For all intents and purposes infinite, as I haven't managed to empty one out during normal gameplay.
More on the OP: don't waste too much time building up your airship early on, initially you want to build only what is absolutely necessary (makes for a cramped airship, but saves resources), at least until you have a decent stock of food and water. I usually park my airship on a greenhouse tower while I expand, so I can grab water from the greenhouse tank when needed.
At what point do you start really playing with the airship? I just went to the under dust for the first time.
Usually somewhere after (or during) the first visit to a upper level gardening tower. Before that I only really expand if needed for placing devices.
