GOG has supported achievements for years. What are you on about?
I'd rebuy this on GOG, even without achievements.
The accusations of generative AI content were a lie, stemming from the fact that the CEO of Pocketpair commented on some tweet by some Buzzfeed writer using AI to generate pokemon art a couple years ago. If Nintendo was gonna do anything, they already would have, ergo they have no actionable complaints. The complaints about animal abuse are just vegans and zoomers, and no one cares what they think.
Relax, it isn't going anywhere.
GOG already has achievements on thousands of games.

Heck, I'd honestly love a DRM-free physical media release with included instructions on how to use the internet to download new updates, patches, etc. Let's get old fashioned!
Biggest Reason for GOG surely isn´t the preservation Part, but the removal of DRM...
