you can place a ground/wall block in place of water to remove it

The different water types have a "priority" ranking, so if you mix a higher priority one, it will take over the other regular water.

Filling it in with dirt and digging it back up again is the usual way to change the water type.

Or I've heard people talk of a mod that lets you change the water priority so you can make the water type you want the highest priority to fix situations where the water type gets mixed.
