Second question again unless something changed with 1.0 (which I haven't seen) planting is still 1 spot at a time for some unholy reason. There was a mod called placement plus that solved that issue but the creator is having issues making it work on the 9.9.9 and 1.0 versions of the game due to some back end changes that happened.
Each mob has a minimum amount of tiles needed to spawn a mob. For most slimes as an example, this is 6 slime tiles of the matching color. There is also an associated spawn chance percentage based on how many tiles are present beyond the minimum. I can't specifically remember how this check works, but for a 90% chance of spawn for the slimes, you need 7 slime tiles in your 16x16 cell.
Most mobs will only spawn ONCE per 16x16 cell, per type of mob (or maybe tile). So, if you have 8 slime tiles in your 16x16 cell to spawn an orange slime with a 100%+ chance, or if you have 256 slime tiles to spawn an orange slime, you will still only spawn ONE orange slime, because the check only happens once PER CELL. So you only need 8 total orange slime tiles in your 16x16 cell.
Each mob has a spawn check in a cell every 15-22 minutes, so they don't all happen all at once with all the other mobs. This means mob farms can be a little slow.
Here is a wonderful chart with specifics for each mob and their spawn requirements.
