best traps for high single target damage?
for enemies like trolls and ogres?

Wall Charger deals the most damage of any trap (Which can be increased with the bonus damage to electrified upgrade) and deals Lightning damage which Trolls and Ogres are weak to but it's slow so you need to make sure it doesn't fire off on smaller enemies.

Auto Ballista (Arcane damage) is also pretty strong at dealing with single targets. But again, it's kind of slow so you want to make sure you don't have it targeting weak stuff.

Ceiling Laser (Fire Damage) and Tar Trap (More fire damage) can do really good damage but requires a Floor + Ceiling location and is less useful on maps where you also need to deal with fire immune enemies.

Rip Saw (Ice damage) is very strong against single targets too and you can double them up along a path. The downside is they might not fit into certain paths due to their length.

Guardian Archers are quite good too as you can get a mass of them due to their small size and they can fire across a maze of barricades quite well and to top it off they can sometimes be targeted by Trolls/Ogres making them stand in place. The Fire damage upgrade can further increase the damage done if you aren't facing fire immune enemies.

Outside of these traps there are also some decent weapons to help take them out:

Sceptre of Dominion is by far the best weapon to kill them. The secondary will make all nearby orcs fight them so if you use it before the orcs reach your traps they'll get pummelled and likely die (This actually scales with difficulty and Scramble modifiers that increase enemy damage). While its primary deals a ton of damage, a fully charged primary can one shot a regular Ogre/Troll with a headshot (While spamming uncharged shots does more DPS... But also has an increased risk of you developing RSI...)

Crossbow is also good with the Stunned targets take extra damage upgrade. The bonus damage mostly compensates for the physical damage of the weapon against Armoured Ogres and well... Stunning them in the middle of your traps can just melt them.

Hand Gatling is good if you have a way to stun/freeze them and get up close and spray into their face. The DPS of this weapon is so high that even Armoured Ogres can melt to the damage despite it doing Physical/Acid.

Finally, there's a single trinket that is pretty effective at dealing with these enemies:

Ring of Storms has an active effect that will outright kill Ogres/Trolls for a short time as it will continually zap them for decent damage for its duration. Of course, it has a very long cooldown so it won't be a primary method of dealing with them, but for like an "Oh Shi-" moment during say an early wave before you have traps set up or a final wave that throws like 10 Ogres/Trolls at you it can be pretty useful.

Most enemies are weak to Lighting and Arcane so Ceiling Lasers, Shockers, Saw Launchers if you are in a tight enclosed place and Ceiling Pounders.

Also I find Ice Amulet + Arcane Staff rank 4 is able to kill Mountain Trolls F A S T

It doesnt do Damage but the Confusion Flower is amazing for getting the Orges and Trolls to run through the Gauntlet over and over again. Helps alot in Rift Lord.

Wall Chargers most of all.

stone staff secondary and longbow headshots/spam secondary melts them, uses a lot of mana. When using something like wall chargers, make sure to place them 3-4sq off the ground so they dont waste their cooldown on smaller enemies. trolls and ogres are 3 squares tall while orcs are 2 and kobolds 1.

Technically wall blades do the most damage with all the modifiers you can apply. But base value the wall charger is the highest raw damage.
