When are the "missing" species in your caravan determined?

Say your starting caravan has Beavers and Foxes. When's the third species determined/rolled? Is it set from the beginning and just not visible to you or does it "roll" once you're in game and you get new villagers?

Basically my question is - if my first group of newcomers has Lizards and I don't want Lizards can I re-roll it if I choose a group with no Lizards in it? Or does this just mean that Lizards are my third species no matter what?

I'm pretty sure all 3 races are determined at the embarkation time.

you can find out what your third species is going to be before the first newcomers arrive if you find an encampment - it can have your last species
