also for harvesting everything - it rly depends on multiple factors like the size of the field, distance to warehouse and hearth, carrying capacity, quality of roads, any perks for speed up of harvesting/planting, etc..... so yeah sometimes adding an extra farm on the field for that 3rth. worker helps, but again it depends on the situation
In order to use all farm fields you can do several things:
1. If you have no Humans (best race for farming obviously), place foxes or beavers there, not lizards/harpies. Last ones have 20 less seconds between breaks so they will go to break 3 times each season instead of 2 sometimes.
2. Build another farm if you not sown all fields.
3. Place farm close to the heart (if possible) if you sown all fields but not harvested all of them
4. Build warehouse close to the farm in all cases (except if you have main wh close)
5. Get the perks on planting/harvesting speed
6. Upgrade human houses in order to get planting/harvesting speed
