Indeed, I (perhaps incorrectly) recalled a game in which early on I chose resources as a reward rather than extra people, which included beavers. Beavers would have been my third race. Then, when the new year caravan choices came, there were no beavers. My third race became something different.
Since I am writing this from memory, others can correct it, or verify it, later in the thread.
I had the same question and it while nobody was 100% sure it does seem that the 3 species are determined at caravan choice or map generation (since somebody has to go into all the camps that you can't see yet), you can't use the caravans you didn't pick as clues tho
I had a similar thread asking if this could happen, and people said this doesn't happen. I'm not 100% sure but i have never seen it and I think you're misremembering
The game has to predetermine what races you get at start because it determines what encounters you will get in glades, what building blueprints you can get offered, perk choices, etc. If it didn't predetermine it, it would have to recon your entire map and everything anytime your races changed. How would you feel if you picked the "Secret Child" perk only to immediately find out you don't get lizards on that map because your immigrants gave you harpies as your 3rd race?
