The timing seems odd at first but the key is to parry a bit earlier:

The best parry to do with sword is Backwave (press L1 on mid stance in the right time). Its useful to break more easily human ki.
The only parry that works on enemies that are not humans its Bolting Boar skill, with Odachi.

Dual swords also have the block & attack one on square. That's one's surprisingly decent but seems like some enemies just have high poise and then they ignore your stab and keep chaining attacks
