I 100% the catalog, but I can lose all of my stamps in my hands when they updated the new catalog.

I look the updates and read carefully. When new catalog coming up for new season. All of my current stamps in the hand can be gone. I think the new catalog will appear in the next season which is fall.

I don't think the new season will be here that soon. They are probably going to focus on the next season once they finish everything they have planned for Barbi, so maybe we'll still have our stamps when they release a new trial for Franco alongside a new catalog. But that's just my opinion.

You read correctly about losing the stamps. Like with event tokens they're only here for what you see now, they have no value beyond that, and there's no purpose in hoarding them

Why would you not lose the stamps? In the next season it would be trivial for you to max out the catalog if you already have that many "saved up". At this point you're grinding exp for an event that doesn't exist yet lol.

According to the update, "Stamps collection will reset at the beginning of each new Season. All unused Stamps will be automatically used to claim rewards from the Catalogs (if applicable)." Which means the game automatically use all of my stamps and purchase the rewards if applicable. I already purchased every single one in the catalog before season ends. I don't know if the stamps can be used for new catalog at the start of the new season. I don't want to risk it by earning any more stamps and potentially losing all the stamps, wasting all my time for nothing. It's best for me to wait until new catalog released or new weekly therapy trial.

Correct, there is no reason to play the game just to grind stamps. If you want to play the game because you enjoy playing it, feel free to continue doing so, the stamps are just a number at this point. Otherwise, yeah, just take a break until new content becomes available.
