One thing for sure is dark souls 3 stamina regen is stupidly fast so its not as problematic as it can be in elden ring.
Since you've beaten ER a few times, you'll probably find DS3 to be easier in most respects. The only issue I ever have with DS3 is getting reacquainted with the controls. (lack of real jump and the interact button being different)
And vice-versa when I jump up and down trying to talk to NPCs when I go back to Elden Ring.
As for difficulty it depends on how you played ER really , it could be either harder or easier. The bosses are much easier to dodge so it should be easier for people that didn't use summons in ER.
DS3 can be harder if you are used to using ashes. I found Elden ring's bosses a bit more challenging (solo). However DS3 has some pretty good ones, too Nameless, Midir, Gael.
Friede, Pontiff Sullyvan, and the The Nameless King all make the game worthwhile.
I will die on a hill saying Midir is the worst boss in the series.
the whole series? I feel like he's more exciting to fight than at least half of ds2's bosses
But I do think he's the worst boss of DS3. Big enemies just isn't fromsoftware's strong suit, they're really cool but not that fun to fight usually.
