id rather say it has the possibility to be too strong. i made a post under morgotts great rune about a self healing tank build and i know the mimic cant use great runes but the last part that i wrote that lists your HP regen and max HP doesnt include the great rune

if you use this setup with a mimic +10 he will outheal any damage it gets and the HP/damage reduction is so high nothing matters (he doesnt get tear or consumable damage reduction tho (idk if he doesnt get consumable, would be funny to watch if he would use that, cause he does uses throwing stuff))

Anyways back to your question OP. No mainly because that will mean retconning the mimic lore. It is something created by Nokron priests to become the perfect copy of a lord AKA Elden Lord.
It still exists as a boss so the lore wouldn't need any change
