In Demon's and Dark 1, that trigger is entering the "human" state.
In Dark 3, it's using an ember.
In Bloodborne, it's ringing a Beckoning Bell.
In ER, it's having at least one co-op partner already present in your game world.
I'm no fan of redbois in general, but invasions are a fact of life in Souls games; ER and Bloodborne are the only two in the franchise that don't permit solo invasions without an attempt to co-op, and ER takes it a step further by ensuring you already have backup present before an invader can even access your game world. It's tilted as hard as it can possibly be in favor of the invaded player, rather than the invader themselves.
If that's not sufficient for you, grab the Seamless mod, and never see a redboi again--but know the game provides you a choice about potential hostile invaders, and that choice is in co-oping without the Seamless mod. Either play solo, or mod up; don't ask the game to change even further to accommodate an audience that would end up alienating the folks who've been here since the first "you died."
These games are meant to be challenging and unforgiving, nevertheless this is by far the most forgiving title yet.
If you really need this to be Skyrim with friends, there is the coop mod but I highly suggest you experience the real game. there is a multiplayer item (a white ring) that can summon a blue guardian phantom whenever a red invades you. Use it. Consider the invader a mini boss you have to defeat

Perfect way to play with your GF. Believe me, I did it with mine that way and she never played a souls game before and we had alot of fun.

Then again, just use mods and solve your issue as you see fit.

There is a grace every few metres, so there is no problem in dying a few times. Specially when you are learning to play a game where death is a core mechanic.
Despite the fact that there are a lot of tryhard sweatlords players that just look for a cheap win (as there are in every online game), there are also a lot of invaders that can give you another experience and a different point of view of the area you are exploring, also you can learn many things about how they fight (they probably are more experienced, in fact you already thought he had a much higher level than both of you when it is not possible)
You both should learn by playing together to not worry about dying in these games, you will only lose the time of a loading screen + the summoning time (less than a minute). Everything else will spawn again. and you can pick up your runes in a second just avoiding a couple enemies. And you will enjoy the game a lot more.
If you want to make the game easier by co-oping, you open yourself up to being invaded to make the game harder again. This has been a key feature of FromSoft games for almost 15 years now.
you could even ask people here in the forum to give you runes to level up to 50 right away, so you could play together immediately. you wouldn't cheese the game too much since you won't also have upgraded your weapons (and please put at least like 30 points into vigor, for level 50).
