I love when he just throws me up and slams me into the ground.

I'm not sure how I'm supposed to dodge roll through the ground slams though (especially the ones with the magma stuff). Even at light equip load (which should grant extra invincibility frames) it's still basically a gamble as to whether I can dodge it or not.

You can roll the stomps, lol, and it does, you just never learned, plenty of attacks in the game are more effectively dodged by jumping than by rolling.
The Crucible Knights' attacks can be dodged rolled through (I don't think I've ever jumped through them, always dodged.)
The problem is that this one (unskippable) boss fight requires you to learn a mechanic that other bosses don't require you to learn. It's the same reason why I hate the Gwyn fight in Dark Souls. I never parry in these games, yet that one fight basically demanded that I learn how to parry just to beat one boss.
When he does the super two part explosion with his hands on the ground, I try to dodge the first then run out of range for the second part. Instead of trying to ddoge again
You can get a free hit with jump attack everytime he stomps and none of his attacks are that crazy except for the big explosion
You came here screaming at how you all of a sudden must learn how to jump for this one single boss when you can just roll through everything he does.
And even if that were the case half of the AoEs in the game are meant to be jumped. Especially the stomps and groun pounds. Are you telling me you were rolling Godrick's Earthshakers? Cause that's just hilarious.
just gotta learn his moveset and how to play better
I think most people sufferred when they were beginners as well, but eventually you get good enough to just have fun without the frustration part
