Radagon felt fair, and I got a handle on him pretty quickly. He was satisfying. EB was a piece of sh**. Immune to elemental damage, runs everywhere, massive AOE. i really dislike running around chasing the boss
I was doing full Arcane and I almost respecced Strength, but then I found a technique mentioned that ended up working for me, which was Star Fists with occult infusion, maxxing charged attacks. I just ran up on his jock and spammed charged R2s, and this did take him down pretty quickly, but it felt like cheese even though I was in fist range
So a boss that I can't fight normally, but can do a melee cheese, didn't feel satisfying. It's one of the few common complaints about ER I agree with

You can avoid Elden Stars (homing star) by dodging towards it and then sprinting away.
It can't change direction very well so once you are some distance from it you can outrun it.
It can be nearly impossible to avoid damage when boss start spamming
Wave of Gold at the same time so high holy resistance is highly recommended.
