"Lords of the Fallen" the Western answer. Its not very good, or so i heard.
"Remnant: From the Ashes" is allegedly soulslike, but with guns.
"The Surge (1/2)" is a sci-fi soulslike. The reviews are mixed for both games, but it... works?
"Nion"
And i think there's some more i'm forgetting... Is Wukong a soulslike? Never quite figured that out.
There's also that one parody of soulslikes, with meta storytelling. Its like you're a glitched character in a broken video game and you're maybe kinda trying to repair it? The premise makes it more comedic than i would like, but the gameplay loop is very much what you expect.
and of course other From Software games like Demon’s Souls and Bloodborne
Lords of the Fallen (2023) - I really don't recommend old title. It is pretty bad.
Steelrising
Vampyr
The Surge 1 & 2 - I don't like second game at all
Nioh 1 & 2
Code Vein
Lies of P - I have not played it yet but I plan to.
Thymesia
Enotria
Ashen
Hellpoint
Mortal Shell
And not Soulslike but kind of precursor to the genre,
ancient title from beginning of the century: Blade of Darkness.
Thanks
For a 1998 game it tried to do mouse controlled sword arm + limb dmg and you get a really jank but amusing game.
I agree, both Die by the Sword and its expansion Limb from Limb are pretty good.
Combat is horrible to me and I never managed to get used to manual attacks.
I've used prerecorded, default attacks but everything else is very good.
Great atmosphere, interesting and funny characters (Maya is one of my all time favorites),
interesting enemies and a lot of innovative mechanics for its time.
Like using shaman mask to blend in with enemies.
Overall nice, little unpretentious adventure without all the drama and political correctness.
Very short one.

It's more of a "Character Action" rather than "Souls-like", in all fairness, but you did ask for stretches as well, so here you go.
Insanely fun combat. Takes a bit to open up due to a lot of skills being locked behind Skill Tree, but once you get it going... Hoo boy!

Seen this one, it's fairly new isnt it?
I was interested in it but some of the reviews put me off. I'll be sure to look into it more.
