Always keep some distance between you and learn how to "taunt" her when she wind up to start the chicken dance.
For anything else use frost magic like Ranni darkmoon and Adula moonblade! If you time the frostbite procs well you can even interrupt Waterfowl dance.
- Get the timing down for dodging scarlet Aeonia. Otherwise you are dead.
- Learn how to avoid her phase 2 shadowclone BS, otherwise you are dead.
In truth most of 'getting good' with Malenia is just learning how to avoid her 1-shot gimmicks. After that she's not that difficult to deal with.
You can use freeze pots to knock her out of waterfowl dance, or simply run away/look up how to dodge it. Learn the boss and her punish windows.
An alternative that can be fairly reliable is Glintstone Blade, fully charge one, and no charge on second will usually land 2 shots on her, since she is input reading, not actually dodging the projectile itself, or so it seems.
Another that can work, if you do it right, is Cannon and Gavel of Haima. They tend to send her flying or knock her down, though depending on your armor and health, it might be a bit of a gamble.

get some buffs, meat, perfumer stuff that negotiate damage

Cold weapon with Chilling Mist or Giant Hunt Ash of War will also help.
Beyond that, not much else I can offer advice on other than bringing "Flame Cleanse me" along for her second phase if she proc Scarlet Rot on you so you don't die in an instant. Rivers of Blood is meh at this point. You gotta be super careful with that skill. I think any blade you can apply "Blood Slash" to would help better so you're not caught mid skill proc while she attacks.
In short, Frost and Bleed are your best friends for this fight, so use any means to proc those elements to your advantage, learn to time the rhythm of her Waterfowl Dance and you should be able to solo her no problem. OH also if you wanna try your luck, you can parry some of her simple attacks in the first phase. It takes 3 parries to break her poise so be mindful of that.
I realised from my fight with her that her movements and cues correlate to Sekiro mechanics. Namely when her prosthetic arm glows with that red spark, that basically means evade the attack by any means necessary lol
Night spells also good as she don't dodge but ice+fire faster.
Second phase actually easier. When she use her scarlet rot explosion she vulnerable to attacks. You can bring her to almost half hp after first explosion without kamehameha. And soon she would do second one and after that she would be few hits till death.
For waterfowl dance, I don't know how to dodge it so I just block. Block first two hits, dodge, block next and attacks her from distance when she do final circle burst.
