But that's the only thing we can do.
Souls likes are rhythm games where you're supposed to memorise the pattern of enemy behavior and attacks and dodge less on reaction and more on knowledge and practice.

no i was killing stuff and suddenly there was one with a shield was harder but killed him a little further same thing but with armor and he killed me in like one or two blows lol

Spear throws?... Soldiers of Godrick don't have that ability.

Make sure to invest some of your next levels into vigor, which will increase your hp. Also, if you realize that an area or boss might be too difficult, explore something else instead, defeat enemies, level up, eventually find some gear and then try to tackle said area or boss again.

If he's the one with a greatshield it's the knight.

That spot was my combat tutorial area. I did it over and over until I could clear the place without getting killed. What I did was sneak in and start backstabbing the soldiers. Isolate and eliminate. At the end only the knight would remain. Get a backstab in on him, which won't kill him at this stage. But it gets you most of the way there.

Run away if you need to, let them reset, and come back to hit them again. Use Torrent and ride full speed though the main street. Hold control and then left click for targets on the right, and right click for targets on the left.

Use a bow, if you have one, to aggro individuals away from the rest.

Eventually you'll be able to take them all on, face to face. Good luck
