There is a lot of middleground between spoonfeeding the player and the nonsensical, garbage quest design FromSoft employs in Souls games.

Although there are at least 3 quests I know of them that doesn't break even if you progressed far into the Ashen Capital. Fia, Millicent and Alexander.
The one that remains a mystery to me is Diallos and Varres.

Roderika's quest will be missed if you take the passage around the castle before completing her quest. Doing so will skip the quest entirely.
Milicent's quest isnt missable, however its also the hardest quest in the game to complete naturally. So its wrong to say its easy to complete because she is hard to miss for a thorough explorer.
Most quests can be hard to complete depending on how a player progresses through areas. If a npc moves to an area they've already cleared, they wouldnt know that.
