All of Melania's move's are not "unfair" in isolation. Much like how people had problems taking down Absolute Radiance in Hollow Knight, it's the fact she can cancel certain attacks into follow ups. Especially with heavier weapons, in phase two being able to cancel a hit into a kick that people using slower weapons won't be able to roll out of of. Thus healing her and giving a guise of "unfairness". If that same person used a faster weapon, they may be able to avoid the kick completely.
Melania is much like the harder bosses in Sekiro. People always exclaim that fight's in that game force you to play the way the developers intended. I've only gotten through a little more than halfway through my own playthrough of Sekiro, but it's true. Melania is the skill check that makes sure you are using and abusing all the mechanics presented to you.
Killable? Of course
F___able? Maybe
As Demon of Hatred was clearly designed to be fought in Dark Souls/Bloodborne;
Malenia was meant to be fought in Sekiro.
Trying to fight her coop is no fun either thanks to the ♥♥♥♥ connection problems.
