But think about this. You're in a sword fight, and someone is swinging a big fecken' scimitar right at your jugular. Armor or not, is your first thought going to be "Hey, let me launch myself across the floor, roll, stand up, and keep fighting"? No, you're going to try and sidestep or dart back.
A roll, you have to get to the ground, do the roll, and stand back up, which can take several seconds, not to mention you're making it harder to keep your eyes on your opponent, which is a lot of work to do the same thing as just walking backwards.
To be fair, if a guy is coming at me with a scimitar:
A) His range of effectiveness actually scales down as he adjusts his aim; the weapons are good for sweeping blows, but mid-attack they are not exactly weightless where you can shift to where someone is going to be effectively (if you do, probably lost inertia and thus damage dealing potential).
B) In this situation - it could be more effective as one may not expect you to do so in literally any capacity. Like you vs me, you wouldn't expect it - so when I leaping roll into you, I may have the element of surprise enough to say, land a sneaky blow with my side-arm to slash your ankle. Or roll into them to knock them over.
Another example - spearman; repel his attack with a shield then drop the shield and roll into them (too close now for them to really use a spear) - bam, stabbed him in the chest.
Mind you - the folks doing this are going to be pretty strong wearing the armor and stuff all the time. They can most definitely get off the ground faster than you or I in it. That or you roll at an angle to try and position yourself for a follow-up attack, like a sweeping lunge with a dagger (should hidden daggers/flintlocks in one's boot be a thing).
Edit: And ofcourse - you are also trying to go for the least number of attacks if considering rolling. You would be exhausting your stamina a good deal, so every movement needs to count.

equip load was demanding, for the most part fastrolls required either light armor or heavy stat investments
medium/fatrolls visually made sense, they were clunky and weighty
attacks had weight, slowing down both the player and enemies
with ds3/er, combat is just anime ♥♥♥♥♥♥♥♥ pretending its not while paying lip service to the better games they ripped the mechanics from
you can pretty much wear anything with little to no consequence and it all animates exactly the same
