Sword and Board or Greatsword build?

I'm looking to use one of the builds above for my next run, but I wanted to know which one is more fun/good in yalls opinions
PS: I'm looking to not use magic because it is complicated/not fun in my opinion

Pillory Shield pretty much qualifies.

Try both, see which u prefer. Some enemies, like crucible knights, are difficult to deal with without parrying them, at least for me, while with others a shield is just needless added weight.

Well if you want to know what the better build is it's clearly greatshields. As it turns out shields are actually great in ER again compared to DS2 and 3, so we went back to DS1 where greatshields were completly busted.

Use it together with any spear + bleed or just antspur rapier + bleed and you will wreck almost any boss by simply blocking and attacking while blocking.

I've heard people say sword and board a lot and I had a guess but I never actually knew what it meant

Greatsword builds are a cool, but they are a lot slower and measured, less opportunities for flare.

I prefer the big bonk build, though i might be biased since i've never really utilized the shields aside from parrying.

Why not both? Greatsword and shield works perfectly well.
Claymore is basically just 'Longsword, but more.'
