Also, what zero said. There are a bunch of different markers and beacons available to help you remember stuff. The beacons are not only ade visible on the map, but also your compass and the overworld. They will disappear as soon as you approach them.

MapGenie (the one I prefer for Elden Ring) or Fextralife both provide fully interactive maps that have information and the ability to mark things as 'Found' and dims them out. It is not 'in-game' of course, but then you don't need a Mod to use them either. :)
Note that if you don't want things 'spoiled', you can turn off multiple categories of things and then they won't show on the map at all. Both also provide search functions which will show only the thing you are looking for.

This way, even if I abandon my playthrough for a week or two, I will still know what I have and haven't completed.
I will agree a very basic quest journal would have been nice. Not something with Skyrim style quest markers or anything, just a basic journal listing things like
"Blaidd asked me to meet him underground beneath the well in Mistwood" or
"I've been invited to the Volcano Manor if I can reach the Altus Plateau" kind of thing.
Just quick reminders since most of the dialog isn't repeatable would have been nice.
