To be fair, though, I'm one to talk. I'm using Holy weapons, for Marika's sake - the single element almost everyone has a hefty resistance to.
I don't think "mind control" is a legal defense, though I do hope he can at least plead Magic Femboy-induced insanity.
Just keep the purifying tear handy and kite him while spamming L2.
The npc that drops it is also super easy to cheese if a player isn't great vs Tiche type npc's (sneak attack, run to the end of her leash so she despawns, repeat).
The AoW is percentile based, can stack twice and mostly just scales with upgrade level so stats don't really matter.
That also makes the Black Knife super front-loaded, so I wouldn't waste a lot of sombers on it just to cheese one boss. Around +8 is almost overkill for Mohg.
Double uchi could be more damage, or double curved big sword, maybe bleed infused dismounter or whatever, if you can take the weight.
Its true that double equipping and using L1 movemset = more bleed and dps.

Go get the crystal tear by beating Eleonora (you could use her twinblade, but the fang is fine) at the 2nd church of Marika... Grab Mohg shackle from the sewer, and the Mimic Tear from Nokron... then the fight is easy peasy lemon squeezey
uchigatana need to be +24 in comparison, GHolden Halberd +9 is a min of 620 AR, Bloodhound Fang +9 is min 460 AR, Uchigatana +24 is 363 AR. By the moment bleed procs with the Uchigatana the Golden Halberd already dealt the same damage or more than the Uchigatana damage + bleed (this considering a fast and unsafe proc).
Sure, the uchigatana is safer by "attack recovery" but the amount of attacks needed is higher and dealling 2 attacks per opening is far less safe than 1 GH attack, also the GH have range safety too, leading to safer openings and even more openings.
The pro of BHF is its moveset but if not used properly ina fight against Mogh it may put the player in more danger than not when Mogh spread his crap on the floor.
Your strat is sound, though. Regardless of when you're encountering the big man, using whatever bleed weapon is the most comfortable for you is the ticket, as he's weak to hemorrhaging, ironically. Any tanky spirit ashes can assist with drawing aggro so you can get those hits in, too. There's a few glovewort around Mohg's mausoleum that can enable high level spirit tuning.

If you've gotten to this point naturally without Varre's... assistance, Lord of Blood's Exultation, a talisman that increases attack power upon inflicting bleed, can be found beneath Leyndell if you wanna use Mohg's own fighting style against him. Within that same area you can find Mohg's Shackle, which can be used twice to shove the Omen in question to the floor for a few seconds, allowing for free hits. Also, make sure you grab the Purifying Crystal Tear from the Second Church of Marika in Altus Plateau. It'll mostly negate the damage from the Nihil ritual that sends Mohg to phase 2 of his fight.

Pick up White Mask Helm through killing 2-3 Nameless White Mask invaders (Mohgywn Dynasty Mausoleum, area with the giant birds) and Lord of Blood's Exultation talisman (Leyndell Catacombs) to receive the same buff Mohg gets when you bleed him. The helm gives +10% AR and talisman gives +20% AR. They are additive. Also pop a Fireproof Dried Liver, Pickled Turtle Neck (stacks with talisman), Boiled Crab (+20% physical damage negation) and Exalted Flesh (+20% physical damage) before entering.
The fight will be quick because of the absurd amount of damage Mohg brings to the table.
Bleed removal and talismans are not recommended due to the high fire damage and high physical damage Mohg brings to the table, effectively punishing the player for trying to remove the build-up. If you are knocked down Mohg will almost always be waiting with an attack to finish you, from a standard attack, to his dive-bomb or just throwing out some bloodfire. If you are knocked down and in fire, or Mohg is attacking above your body but not hitting you (e.g. his thrust), you will take bleed build-up anyway and that point it will probably proc on standing.
You can choose to trivialise the fight with a Mimic Tear if you get too frustrated by Mohg's nonsense. Also, feel free to use Mohg's Shackle to push to Phase 2 quickly and keep your buffs going.
