same way that you do a normal attack

but it is finicky and I've missed it plenty of times

best suggestion I have is stand right in front of it, move close then press attack

Read up on poise, every hit does poise damage, do enough and it stuns enemies for a "finisher".

You get a sound effect of a Stagger break, and they kneel... You either need to be in front of them or behind them, if Humanoid, then light attack.
Bigger things have a glowing orange area (Like Dragons it's their eye or The golems their Stomach)

Depends what enemy you fighting with.

Regular sized enemies : You can either sneak up and backstab them, or you can hit them continuously with heavy attacks until their stance breaks. Once that happens you can stab them in the chest.

Rider enemies/Flyer enemies : You can automatically stagger them, once they fall. For rider enemies you can kill their horse so they fall to the ground, while flying enemies you need to hit them mid air to fall. Once they fell, you can finish them off with a stab.

Large enemies : Practically the same, you need to hit them with continuously, preferably with heavy attacks. Once they falter, stab them in the area that highlighted with golden sparkle. Usually it's either the chest, head or the eye area.

When you stagger them there is a rather loud sound effect, kind of a combination of a drum and bell that indicates it's your time to rush in and deal critical blow.

You can stab them simply by walk near to the spot and press normal attack.

Everyone is explaining stance damage but it sounds like you might be describing a parry. Certain attacks can be parried to open enemies up for a critical attack like that, just put on a parry shield and try to time it.

Oh yea parry, acts as a stance break too... yeah rereading the OP's post, they might be talking about a Parry, with follow up riposte.

Parry and stance break both act independently from each oher by the way.

Consistently hitting a boss close to the point where it might stance break, followed by a parry into riposte will not reset the (invisible) stance bar but will still trigger a stance break with enough damage dealt afterwards. Just fyi.

It doesn't act as a stance break. It does nothing to affect their poise health and I think the damage you deal with the crit is different.

Yeah the only way a parry is going to affect their poise health is if the timer for it regenerating is almost complete, and it finishes ticking down during the riposte animation since the boss is invincible during that so nobody can hit it to reset the timer. Although that's very unlikely to happen.

I'm aware of how it works, but it's still similar, as it opens a window for a follow up attack....
I should have said "It acts kinda like, but not the same as, a Stance break"

You gotta stagger them. Every big enemy (with a few exceptions) has a hidden stagger meter. It starts to regenerate after 6 seconds, so if you keep hitting them they'll eventually stagger. Charged R2's and Jump R2's do the most stagger damage generally. So when you're learning a boss it's important to learn when you can safely fit those in.

Also if you can't get to the boss you can use a throwing knife to stop the stagger meter from regenerating
