ER does a good job with the emptied stamina actually stopping you for that small while, you have at least some management to keep up when you start to run low on stamina.
Not as good as DS2, but at the same time I don't think Fromsoft is going to tone down the speed of the player anymore so this is a fine line in ER
The evolution from Dark Souls 3 to Elden Ring I see is pushing players more towards shields and block/parry. It's something that makes for pretty boring gameplay though.

How is blocking/parrying more boring than dodging?
Parrying is pretty much the same as dodging, just harder to do and also gives you a satisfying opening for massive damage (either the ripost or just landing a big attack)
Blocking, I suppose is less skill, however with guard-attacks you can take advantage of a boss that way and also stagger the boss for opening them up to massive damage just like a parry would
I'd say blocking and taking advantage of guard-attacks or parrying is more interesting than pure dodging, since you still do the same thing as dodging but more
Ofc unless you just use golden parry which is a no-brainer parry, but then again you can make that point for a ton of things (like magic, mimic tear and more)
It's something that is severely missing in a game like Elden Ring because not only is timing on parry extremely narrow and difficult to pull off for most players you have to somehow identify what you can or cannot parry. All of this combined is why I never bothered with parrying attacks in ER or DS which means for bosses where it might be sensible to parry an attack I cannot do it as I've never trained it outside boss fights.
In Stellar Blade you have to parry and dodge all the time whether it be boss or trash fight because they all follow the same basic rule set. In Dark Souls and Elden Ring bosses and trash often follow different rules meaning what you learned from the trash doesn't necessarily help you with fighting a boss.
in the Elden Ring DLC because dodging became so much more annoying and unreliable I fell back on an easier defensive mechanic which is blocking and counter attacking after a block. It worked but as I mentioned above it's a freaking boring play style.
