How do you choose armor ?

Are armor stats important (besides weight) or is just a fashion thing ? I'm asking this since I'm trying to make a build in which I have no idea how to do

Usually, i just pick fashion. Sometimes i change for resistances, in case i'm going through a poison swamp or there's a hard hitting elemental enemy, but talismans is enough most of the time.

Armor by itself can get you 30-40% negation, which isn't too much of a factor on its own admittedly.

But stack it with:
- Dragoncrest greatshield talisman
- Other dragoncrest talismans for elemental defense
- Blackflame protection
- Ritual shield talisman (for the first hit)
- "fortification" spells (like Lords divine fortification)

And you can get 70% or higher negation, which is a game changer. I can avoid Elden Beast all day, or I can just laugh and slap on some regen as its attacks barely do anything to me.

Also, helmets can sometimes give you +5 stat bonuses and sometimes armor can have bonuses, just check item descriptions. Gloves and legs don't matter too much, just depends on the set.

Pearldrake+2 or +3 for Non-phyiscal damage negation.
