It's a pretty big difference actually.
DKS 3 you find astora's straight sword pretty early on by just going to the first boss area.
You find enough smithing stones to bring it up to Raw +3 relatively early and find the rest to go to +5 later on.
Congrats, you now have a weapon strong enough to take down any boss/enemy in the game and can allocate your stats the way you like.

I have to find tree fragments to make my enemies weaker so I can progress.
The two aren't the same.
just because one person decides to make the game easier doesnt detract from your own accomplishments
And you have to remember that these games are famously challenging; hell, they even created an entire genre of their own, so some very basic research by the "less able-bodied" people would go a long way.
