Too bad I'm playing a NG+7 character and cannot afford to make mistakes at all

yes - put your poise to around 60 (at least higher than 51) and use a weapon that can stagger.

managed to do it at level 140 and prob level 5-6 on the tree blessing thingy. Used 2 great katanas and took me like solid 20-30 tries

pretty much what im doing now, lvl 155, dual katanas, i got her down to 25% at most, but its rough

I mean honestly i could've avoided a lot of damage but poising through boss attacks as if dodging is below me just makes me feel all warm and fuzzy inside.

Either face check with massive poise and the largest shield you can find, or lightning spear spam. Either seems to work. For solo lightning spear spam you'll want to make sure you time your casts after her own spells, not in between her attack chains, or she will hit you. Trading blows with her is almost impossible with her health pool and near unlimited attack chains. Alternatively, choke up on your pride and drop an ash and the summon just outside the room. Gives you all the space you could need to lob attacks at her from a distance.

i just won the fight using the npc summon by the door.. npc finished her as i died.. but the victory counted anyway.. so no complaining haha xD
