Will fromsoft ever release a title like elden ring where your main defense isn't rolling like a chump?

look i get it i loved how in sekiro the fights were done but in all souls series, demon souls, elden ring rolling is like the staple of dodging but for me it completley ruins immersion i just find rolling to be absolutley hillarious why is this a thing?

well rolling doesn't ruin anything for me but I wish quick step/the bloodborne dodge was the default instead for their future games, i like it better

Sekiro is a fundamentally different game, what OP is asking for is DS/ER game but with the quickstep/sidestep animation for dodges instead of rolling (besides Bloodborne, that is).

FromSoftware is now making games filled with QTE rolls. You roll too early or too late, you lose.

No, he's asking for quickstep/sidestep animation by default instead of it being attached to an AoW that can only be used on particular weapons and only when said weapon is equipped.
