does it break the chariots?
I think it causes them to collide? yes
oh well patches is long dead so sadly not an option for me. How do you do it the vanilla way?

In the slope approaching the boss there's a pillar up in an alcove at the right-hand side, hitting that with any projectile will raise it and project a new chariot onto the floor (which breaks the others when they run into it)
The shackles aren't necessary, a shortbow is enough once you know what to look for
To the left is a chasm with a body containing an item hanging over the ledge. Taking the hanging body as a guide while walking over the ledge will make you drop onto a crossbeam. From there, drop further down onto another beam and then onto a narrow wall. It's doable without dying, even if it involves avoiding the chariots and FromSoft platforming.
From here you can explore the dungeon further, eventually you'll see one of those retractable pillars. There's a spotlight on top of it and when hit, the pillar moves downwards to shine the light onto the chariot tracks which will cause them to be destroyed.
Margit's Shackle has an incredibly wide hitbox, which causes the pillar to move downwards upon activating it.
