Will DLC/Content Updates Break Mods?

I want to get back into this game with a modded playthough but given my limited knowledge of how updates for FromSoft games interact with mods, should I just wait for Shadow of the Erdtree to eventually release? There's no release date confirmed yet but I do not want to have another Skyrim conundrum where the anniversary update temporarily broke modded playthroughs for a bit and mods that weren't being updated anymore were left behind.

Does anyone have any experience with past Souls games being fine after a DLC update of some sort while running a modded playthough?

Probably. I’m fully expecting my ranni feet enlarger mod will require an update so imagine it’ll be the same for the others

It won't work anymore until it's updated to work with the new content.

What mods? This is EasyAntiCheat protected game. If you use mods, you can be permanently banned on servers.

You can disable EAC and play with mods offline

Are you? Which mechanics and key elements are we even talking about here that are soooo crucial one would always want to stay online?

If you're trying to make an argument for co-op and/or PvP - they're completely optional and are not required for anything important. By simply connecting to the servers you are able to see messages and bloodstains, and that's it.
