That said, I think Elden Ring is a fine place to start. The story is self contained, so you're not missing out on any lore by not playing Dark Souls first. And although it's faster paced than DS1, it does have a lot of tools that make things easier for players new to Souls games.
First, the open world allows you to go somewhere else if you're having trouble. Dark Souls is more linear, so often if you run into a boss you can't beat you don't really have many options other than to keep trying until you win.
Second, spirit ashes give you some extra bodies in a fight, and while they might not be quite as effective as summoning another player for coop, they can still make things a lot easier while playing solo. Especially with how aggressive bosses can be in ER, it's nice to have a summon to take aggro for you.
Third, no solo invasions. In Dark Souls, it was possible to get invaded by other players while playing by yourself, and the only way to avoid this was to play with a handicap. In DS3, for example, you could use an item called an Ember (equivalent to ER's Rune Arcs) to get a 30% HP boost, but it would also open you up to being invaded. And if you die, you lose the bonus and have to use another Ember. But in ER you can't be invaded (except by NPC invaders) unless you are playing coop or you use an item called the Taunter's Tongue.
So yeah, I think you're fine starting with Elden Ring. If you like it, I would recommend trying Dark Souls as well, and I would recommend playing them in order. Just be aware that DS1 and DS2 will feel pretty different from ER, while DS3 will feel much more similar.
My order would be:
Demon's Souls (if you have a PS3 or via emulator)
Dark Souls 1
Dark Souls 3
Elden Ring
and
Dark Souls 2
Playing Dark Souls 2 after 1 can cause strangeness and discomfort to the player because the game is very, very different from the others.
Edit: Bloodborne is also a must play, but it is locked and rotting in the PS4... sad.
whatever you do, dont start with the dark souls games if you are new to the souls games. they are a lot more punishing and harder. you dont miss out on anything from dark souls by starting with elden ring, both have a completely different story and universe.
why skip dark souls 2? its better than 1 in almost every way.

You dont need play any dark souls game before elden ring.
That said outside of boss fights, I don't really feel like elden ring is easier than other souls games (nor is it harder), and honestly the level design is what makes the souls series special more than the boss fights IMO. Lots of games have great boss fights but not so many have level design like souls.
