How I'm supposed to interact with them? attacking, spells and gestures don't work.

Do you mean the Crystallians? The ones with either a spear, a scepters casting spells or a ringblade?

Use charged heavy attacks until they stance break, then riposte.
After that they'll stagger after a simple r1.
Weapons with blunt damage also help a lot more.

get a troll or big bear to destroy'em with some attacks :)

Find a large enemy like a troll, dragon, or golem and aggro them. Bait an attack to get them to destroy the statue so you can collect the goodies inside. (Yes, it's worth it.)

I mean this stone statues randomly placed in open world, not the enemies, they are sometimes standing near ruins

I dont know if it still works but if you stand on one then quit and reload the game the statue will break. That way you dont have to mess around with trolls or bears.
