Poise Questions
I have a longsword & shield and when I guard-counter a white wolf, after I block the wolf's initial attack and hit R2 for the counter, the wolf is so fast that it attacks me before the counter hits so it interrupts my attack. Basically it seems guard-countering fast enemies is pointless with my current character.

Is having more poise the answer to fix this? Because I thought poise was some invisible bar that you do damage to on enemies and if you do enough damage it makes them break their stance. Does poise have to do with both not being interrupted and not having your stance broken?

I'm not even sure if "break stance" is the technical term, I feel like I've heard it called different things.

Stance is an invisible meter that enemies have where they "fall down" and give you the opportunity to perform a critical hit or lay on some more damage.

Armor and a couple talismans can increase your poise.
Aim for 51 poise

If I understand you correctly, you mean the enemies invisible stance meter. This is not affected by your poise, your poise only affects whether you flinch and get interrupted from attacks (as nfinite.recursion already said). In PVE, attacks will generally either do 50 or 100 or (more than you can take) poise damage to you, so having 51 or 101 poise are the relevant thresholds in PVE to take a hit without being interrupted.

The stance damage you deal to enemies depends on the weapon and attack type you use, with charged attacks, guard counters and some weapon arts being particularly effective and heavier weapon categories mostly dealing more stance damage than lighter weapon categories.

No, as a player, you only have a poise bar, no stance bar. You can be backstabbed or be riposted after a parry, but apart from that, you cannot be stance broken.

EDIT: I forgot that you can be guard broken if you block with insufficient stamina, see Lord Bob's response.

No, players don't have this kind of stance meter.

The only way to get guard broken is by blocking while having insufficient stamina to block the hit, which will leave you open to a riposte in pvp and more damage dealt by the pve.

There are, however some human enemies in the game (usually NPC invaders) with shields that can parry your attacks and open you up to a critical attack. While similar to having your stance broken, it's not the same in that it's not due to a "Stance Meter" being filled, rather it's a unique status that you are placed into when parried.
