Pretty under leveled, yes. I'd recommend 120 at a minimum.

It kind of is. The entire Haligtree area is considered a post-endgame area. If I'm not mistaken you can easily level up to 120/125 and wouldn't be overleveled when facing her.

level up some more, get the Dragoncrest Greatshield talisman from Haligtree and try to have 60 vigour. then try and learn her attacks

Dragoncrest greatshield talisman can be found on a platform over the elevator that is leading to Malenia if I recall correctly.

Malenia heals every time she attacks you. So you have to do more damage than she heals. She also does sickening amounts of damage. So overall, don't get hit is how you beat her.
