Here we go again.....
You actually used in-game mechanics so dont think too low of yourself...please. Everything you did even with summons was perfectly valid but the most important thing, did you actually enjoyed it?
But if you insist not using summons or anything else go for it. As long you have fun nothing else matters.
No one can answer this but you. Are you actually able to identify the cause of each death instead yelling "UNFAIR ♥♥♥♥♥♥♥♥ I QUIT"? Do you try to adapt in order to solve the cause of your death?
Anyways this is Elden Ring, not rocket surgery. You should be fine and enjoy the game but...it will require certain effort.
If you are questioning weather or not you enjoy something, chances are you don't.
Another thing worth note is that you shouldn't feel bad for using everything and anything to your advantage. Especially spirit ashes/ cooperator summons. Granted, I get where you're coming from with the OP summons, but that tends to balance out later on in the game, where most people stick around level 90-200 and have endgame gear, generally.
Oh, and don't forget to take breaks if you've been fighting a boss over and over again, if you really think you might ragequit.
dont feel bad for beating bosses using spirit ashes or summoned players, the game is better with friends anyways, and i personally just find it funny to watch the spirit ashes fight enemies, brings me back to the age of NPC-fight videos
the main thing of importance is that you enjoy yourself while playing.
face-tanking with a big meaty weapon and a ton of health can be quite therapeutic; level up your vigor to a respectable number, ring in some spirit ashes and let hell loose on the bosses, and if it doesnt work at first, you can always come back later, atleast for most bosses.

they obscure the battles so much that you think that you cant do without them, because the bosses movesets feel less predictable with a summon around.
It might be weird but the advice i give you is to get to altus plateau using summons and all the cheese you can throw at them, then make a new character and play without summons this time. This way you have a head start in terms of knowing where to find stuff, but you can now learn safely against the bosses in limgrave/peninsula.
If you quit now you will never know wether or not melina is the egg in renallas arms.
youll meet a lot of bosses that have improved versions later on, those improved versions have movesets with additional moves added to them. This means that if you challenge them in the "correct" order from weak to strong, they always just gain 1 additional move and its not that much of an adaption process. If you go beyond a certain point using summons, you will have a hard time switching to not using summons, because youd have to adapt to like 8 moves at once which might feel overwhelming. So in a sense, summons are like a drug, it is not you being bad for feeling like you need them, its the neccessary adaption at a later stage that feels overwhelming. there is opinion mixed with the info but hey, im just telling you that you are not as bad as you might think you are.
Maybe explore more and don't rush from encounter to encounter
if you would like to learn how to solo bosses without spirits or npc summons
-> take your time learn the movesets slowly and one by one.
try over and over with the goal to not beat the boss but learn the boss movesets.
depending on your talent this can take 50 minutes to 8hours before you truly master a boss.
Biggest mistake beginners make is:
" Try to win vs the boss from the first encounter...."
I dont even care about damaging the boss in the first 10-20 encounters....
I just try to learn as much as i can and attacking myself would make the learning process more complicated and therefore slower
This game takes time to learn and requires alot of patience, you are gonna die alot, that's just the sort of game it is, if you don't like that, the game isn't for you.
