Parrying.
2. You're supposed to die.
3. You can go back there later.
But assuming you're not, or you're a stubborn souls vet, I'd go with the vagabond (safer, less damage) or hero class (more damage, less shield protection). Keep your shield raised at all times until you get used to its attacks.
It has one or two clear windows to get a hit in, but you need to be prepared to evade immediately after.
- When it starts its usual "8 hit combo" in patterns of 2 attacks each -> On the fifth+sixth attack dodge toward its right side (your left) from where the thrust came from. If it looks like its about to stop, get a hit in then prepare to dodge.
- If however it keeps going onto attacks seven+eight, move slightly left to make sure you don't get hit by its swing, get 2 attacks in, then prepare to dodge.
- When it does its "stab the ground rapidly followed by jump slam" attack, you can usually punish it for 1-2 hits after its slam. Usually, be careful here as it does sometimes animation cancel right after hitting the ground, leaving you vulnerable (geometry glitch).
I'd avoid it completely once it galvanizes its swords, as the swords have partial shield bypass while the effect is active. It will wear off.
