For melee its much more difficult. They're designed to roll catch you at close range, so unless you are light dodging (less than 30% weight capacity, rolls execute much faster, therefore consecutive rolling is much faster) the best defense is simply to get out of range of his melee altogether when he starts a combo with those daggers.
You can dodge through two dagger melee attacks, but the third attack will likely catch you no matter what. Roll backwards, out of range of the upcoming third attack.
