Nobody can tell you how hard it's gonna be for you, in the end everyone found different boss difficult for them depending on the factors mentioned above.
PS: it's my opinion so take it as you wish, just remember if you struggle you can alaways summon magic player that will one shot your boss within 10s.
For veterans: 5-6/10 depending on how long it’s been since they dodge rolled out of an attack.
For NG+4 (journey 5) and up, 9-10/10 depending entirely on your level and build, bosses like malekith and malenia become way more punishing with their insane damage, and bosses like fire giant and elden beast become more aggravating because of their massive HP count.
- If you use all the equipment and stuff at your disposal, this game is 2 most of the time. There are a lot of options to choose from.
- If you impose arbitrary restrictions on yourself, such as no shields, no spirit ashes, not using X weapon, not using spells, not using ranged weapons, etc, then its an 8. Of course you have only yourself to blame at this point.
4-5 if you use sorcery. You can stay at range and pick off enemies one by one, then go in melee range. Much more relaxed and enjoyable.
