If you mean use everything what is available - they (DS3, ER) are both nothing special in terms of difficulty once you know the general patterns.
Although ER (in application to the last point) does go an extra mile to give even more summons to players, so I guess it is easier if you look from that side. Magic and some of the WAs also feel even more busted in terms of PVE.
just think about that you can get an S+ scaling staff that cant be upgraded(meaning its already really good) with a really good spell right next to it that also gets a 30% boost when used with that staff without needing to do anything for it. all you got to do is to ride over there and pick it up, then its keeping distance press L1 and enjoy
or just think about the whole existance of summons and the wonderous physick
i played all DS games and they are really lovely, but they are linear, and that makes them a lot harder
Though if you mean the level of versatility you have with items, weapons, how you level your character, spells, stealth as an approach, spirit summons, whether or not you can just avoid groups of enemies outright, etc, then its much easier by a huge margin.
It can be made to be easier than other titles. Spam is one means, as are ranged spells, stance damage, status effects, spirit ashes, summons, etc, etc. You're not making anything up.

I tend to answer in a general sense. I'd say no. While I was able to beat it with two different characters. A friend of mine who is a streamer gave up without even going near the tree sentinel. So it's subjective.
But I'd also say it's not overly difficult.
I find games like Cities Skylines to be overly difficult as I have no idea what I'm doing with traffic and residents always dying. But I completed the original Demon's Souls plus the Dark Souls trilogy. So legacy skill is a thing that helped me in ER.
If you haven't played DS3, I guess it is pretty hard.
However, because of how open region Elden Ring is (not really open world in the traditional sense) you're able to approach areas and bosses earlier or much much later than you would in Dark Souls 3., leading to the difficulty and challenge being very dynamic. It's probably the best thing about ER as a whole.
