Elden beast is pretty fun too once you learn the trick to it. Its closer to more old school bossfights than most bosses in the game.
It's an enormous shame that the terrible duo fight is mandatory and then the solo fights are all hidden in the ass end of the world because they're actually good. Apostle in particular is really fun because so much of his stuff can be strafed or run under for longer punishes - it's really nice that the game rewards you for overcoming the instinct to make distance and getting stuck into the lanky boi.
Because I enjoy adrenaline rush boss fights like Krauser from re4, Artorious, Maliketh, Godfrey, and Gandorf TOTK 2nd phase.
I also like fighting Malenia because you have to play aggressive because of life steal and she is one of my favorite boss designs in the game next to radagon and godfrey.
It would have been Malenia, if not for her Waterfowl Dance completely breaking the flow of the combat. I also wanted to like the dragons more, but besides Placidusax, they all feel too similar too me, so none really pop out.
1.Malenia
why ? The combat flow is just godlike. Its so much fun to fluidly evade all her attacks.
In my opinion the most fun boss to ever be in any Fromsoft game.
There is little room for error against her Waterfowl or her Ghostcharge attacks but when you manage to evade these without getting hit -> the feeling is soooo nice.
Good music , nice atmosphere , superb combat flow , S+ Boss
2. Godrick
You may wonder why i put Godrick so high ?
Answer: Its a typical Dark Souls 3 Lategame Boss where you can be aggressive
Combat flow is super good and its the typical : Dodge + counterattack every move
And since he has so many different attacks its really fun.
He is almost the only Boss in ER that is like this.
3.) Horax Loux/Godfrey
Superb bossfight for the reason that your movement and positioning matters.
I love bossfights were you can be agressive with good movement.
These fights are rare in Elden Ring but Horax Loux/Godfrey can be out manoiuverd hard.
These fight is almost like a mortal kombat fight where your positioning matters the most.
Worst:
Fire Giant. Worst Camera ever
Elden Beast. Runs away all the time
Morgott/Margit. Booring
In these fights the common theme is be passive and wait while watching the Boss do his thing.... then see that 1 attack you can counter and punish it.

He has just too little HP.
Favorite boss by fight design would be morgott and Godfrey both fantastic and fun movesets.
Favorite boss overall is placidusax, with Godfrey and malenia as close seconds
Mechanically, Mohg. It's so satisfying to get everything right while fighting him.
I like Rykard too, because big serpent big sword big bonk funny.
And the crucible knights.
