I'll sometimes do this with a shield to stance-break non-bosses.
i believe it's Y and a bumper that does it so if you can avoid that it won't happen
Interact button + Block button = Toggle two-hand equipment in left hand
The things I've found it really useful for is applying weapon buffs to both weapons at the same time, and using your off hand weapon art.
Twohanding shields is kinda underrated IMO, they do a lot of stagger buildup and you get an improvement to the Guard Boost when twohanded (useful when you need to block powerful projectiles when running up to whoever's firing at you), you can even both Guard Counter and do a multi-hit attack combo with shields... the only problem is that they have REALLY short attack range.
But chain stance-breaking normal enemies with a small shield is pretty funny.
