To negotiate heaviness just use great-jar arsenal. It adds a lot of equip load. You will be requiered only 20-25 stamina.
I recommend to try new stuff on Journey one because it's the fullest game experience you are gonna get in Elden ring.

Let me address your misconceptions, and provide some info that makes this build even more attractive.
Faith builds have tremendous variety in their spells, and can cause fire, holy, and most importantly, lightning damage, which is ungodly powerful right now.
But even MORE importantly, each crucible set increase Crucible spells by 3.5% - so with all 4 pieces, a whopping +14% to the spells...which are already great as is.
So I say go for it!
Every elemental build has bosses and enemies that resist them. It's the price you pay for spells. You can still win, your damage will just be kinda low for those particular fights.
Important thing is, it is fun to use. Whatever setup you prefer as long as it works for you. It is more for the coolness rather then anything.
If you really want to try equipment of the Crucible knight, get a friend to transfer all of them to a new characters and enough ruins just to be able to wield and wear them. Then slowly level yourself up as you progress. It can be an interesting experience, it is for me.
As for PVP, it is quite viable but not top tier.
Crucible horn is a more contextual, but it can launch enemies skyward if you hit with it. Malenia included.
Then there's Siluria's tree, which aside from being a great poise/stance breaking spear, its WA hits like a truck even if the target is holy resistant.
However I would avoid using the crucible hornshield, its not very good. I'd instead opt for one of the Leyndell knight shields, as they match visually with crucible knight armor and have much better guard.
