What's the best weapon for an entire playtrough? In DS3 I used the Longsword and Lothric Longsword...

Bloodhound fang. Early to get and carries you through whole game
Lordsworn's Greatsword (found in one of the caravan chests near the Gatefront Ruins right at the start of the game) is pretty good, the big balance patch made greatswords faster so it fills a nice niche with both decent range, decent stopping power and decent speed. Easy to get too.

The halberd dropped by the Tree Sentinel is also amazing if you're planning to put a couple levels into Faith, it's got tons of range, a good horseback battle moveset, deals elemental damage and comes with a built-in buff that gives you and any nearby allies (co-op players AND spirit ashes) 30% more damage and defense
Anything works really. Big weapons are good vs most common enemies, since they pancake and poise break everything. Small weapons can be better vs bosses, since they hit faster and apply statuses. I only suggest always carrying something like a caestus as a secondary weapon, for the fast strike damage with low stamina consumption.
The answer to your question is: it depends on the build.

Find out what builds you are interested in and then ask the question: What's best for this or that build.

late ish game,serpent hunter spear (rykard only), finger print shield (no skill), blasphemous blade, runis greatsword,and post final boss sacred relic sword. take them to +24 normal or +9 somber upgrades, while +25 and +10 are stronger they are hader to get.
Longsword is still a good reliable weapon. Though by late game you will probably want to use something else.
Bloodhound Fang if dex and grafted blade greatsword if strength. You can change them later for better options but those will be strong for most of the game, especially early on.
IMO Moonveil. It's just good enough to not have to pay attention to the upgrade/Ash of War mechanic as much as you would otherwise. Using this weapon and leveling to make it good will also enable you to become a quite powerful Sorcerer/Sorceress.
The easiest weapon category is greatsword. They stagger easily and that's all you need. Longswords are actually not great for beginners.

Cant answer your question properly without having a clue about your current build/stats.

So all i can do is to name the best weapon you can get right starting the game(literally in one or two hours if you managed to beat boss guarding it). Godslayer greatsword, a legendary weapon that obliterates everything non fire resistant with a combination of massive direct damage together with a dot doing a % of your target HP.

With the proper stats together with buffs and debuffs this sword can destroy even the last boss(es).

It also swings a bit faster than most colossal swords. Problem being the guy guarding it is a bit buffed up.
Below Limgrave is a early zone and eventually you'll reach a castle. somewhere in that castle (just look it up) is the Claymore. Low stats required and decent weapon.
Another option is this zone I'm talking about, to the far west of the zone if you explore it, you'll find a Merchant. He sells a Zweihander Ultra Greatsword.
These two I used most of the game until I got some OP boss weapons.

As someone else said too, very early in the game in a chest wagon is a Lordsworn's Greatsword. This is a very good beginner weapon until you get to later areas and find better weapons. Don't upgrade it past +3. Just use it as +3 until you replace it.

Some more options: At the Roundtable Hold is a merchant lady. She sells some weapons. I'd personally buy/try the Mace, the Battle Axe and make sure to get that Longbow, helps with aggroing mobs one at a time or picking off enemies. You can buy arrows from the very first Merchant at the start of the game.

Lordsworn weapons. Other than that, completely depends on your build.

I don't know about best, but the easiest is usually something you can poke from behind a shield with, because then you can take out the majority of non-boss enemies with zero risk, and save all your resources for bosses. The Estoc is good at the start, and the Spiked Spear or Cross Naginata are great long-term because of their innate bleed and ability to be infused with whatever other scaling or affliction you need.
