I would not say, it's extremely easy, if you use summons and OP weapons, but it's getting a lot more doable for people, who don't play these games for months
I just got this, and I was thinking it wasn't anything like Skyrim; more like Ninja Gaiden 2 open world for gameplay.
In terms of how powerful the player can get it can be much easier, especially if you use the tools the game gives you (spirit ashes, you have no room to complain if you don't use them when struggling).

Found a +7 Spear in the early game while riding around the map, also found tons of items and vendors... if an enemie is too strong (1-hit) and tanky I will leave them, until I'm getting better gear.
I'm astounded how far you can get, when you just mount up and ride along the pathway killing and exploring the map.
The general mobs that you take on, seem to be easier than previous entries.
The bosses / mini bosses / champions are very much still just as hard.
The beginning of the game holds your hand a little bit more than previous entries if you allow it too, and i'm not saying that as bad thing.
Since the world is so big it kinda depends on what weapons you find and use.
I got the blasphemous blade really early in my first playthrough and it felt a bit cheaty.
Not even close. Maybe harder than the NES ones, but Sigma 1 and 2 felt much harder than Elden Ring.
