Why is Godfrey so huge
Isnt he just another tarnished like us?
Why does he get to be like triple the size of every other tarnished?

We can openly say he is the only bodybuilder in the Lands Between.

There has been a decent amount of character that should be human sized yet are quite massive compared to us. The first one I think off the bat is Vendrick from Ds2.

And while Vendrick and Godfrey are quite huge, they are in reality only human sized like us. The reason they appear so large in game is for artistic purposes by Fromsoft to make the characters more imposing and easier to see on camera. After all, wouldn't fighting a human sized Godfrey not feel the same as fighting the larger one?

In short, Godfrey is technically human sized, but appears larger in game for artistic reasons.

there seems to be a running theme in some games and comics/shows where the size of a human foe demonstrates how much raw power they have ie godfrey,redahn, vendrick and sir Alone from ds2 Gwyns whole family from all the ds even the girlboy was much taller but from a game play point think it's an advantage to the player if you can see 90% of the enemies body almost the whole time your fighting them it makes dodging and blocking easier since you can see there whole body above your characters head

This is supported by the fact that you can often wear their armor/use their weapons after defeating them.

Enemies are large for gameplay reasons, mostly so you can see what they're doing. Seriously, was anyone able to keep up with whatever blackflame friede was doing in Ds3? I couldn't and she was exactly the same size as you.

Also summon tiche while idle somewhere and check out how tall she actually is.

Originally in Demon's Souls, creatures that consumed large amounts of souls would swell in size. The larger the 'demon' the more souls they had consumed. This idea has been roughly translated across the Souls series as 'more power = larger the person'.
