with the right strats the deathless run will come down to the fight with maliketh because thats the only fight where you might realistically die even with a good strategy and good preparation. its also a lot faster than the sl1 run as you can just stomp most enemies on your path.
this is obviously assuming you are not talking about a blind run,
in the case of a blind run the SL1 run would be a lot easier.
Harder than both is a weapon/catalyst upgrade +0 run. You get ample dmg at +0 for a good while, though it starts to clearly fall off at Royal Capital and beyond very significantly. However, a lot of the game's combat is often simply steamrolled by sheer damage output without need to play properly, learn a boss/enemy, etc. via overwhelming brute damage output. In contrast, a SL1 run is still very manageable and almost nothing 1-shots you if setup half decent so you can eat 2 hits before death in most cases (with buffs all but 1 case as far as I know). The difficulty of SL1 runs gets over-estimated but I'm confident a large number of players can do it that think they can't if they tried. Plus there is like a bazillion different types of cheese if you really need and don't place rules against using.
Deathless might be non-issue for speedrunners but odds are the typical player will die even with maxed vigor at least once or more in their playthrough, and even skilled players would likely make a mistake on occasion or fall from a cliff cause shortcut (to being dead that is).
With the tools available you can cheese the game easily even at SL1 and you don't have to worry about failing because you can try again forever.
Even if you have a perfect build ,death can happen from the smallest mistakes like missing a jump and falling. And the game is pretty long.
